Have you ever bought a store brand or can of the common brands of tuna and been excited when you opened it up and there were identifiable pieces of tuna in the can and not just some mashed-up bits of suspicious looking “stuff” that is supposed to be tuna? This tuna is packed in olive oil which helps it retain its texture and flavor much better than packed in water. Why are all the big box brands packed in water these days? It is cheaper. Not better, just cheaper and that is all they care about.

Something you will have to get used to is that when you fork this tuna out of the can, and you have to fork it out, not just shake a glop out like with the cheap stuff, you will need to break it up of for use in recipes. This tuna comes packed in actual chunks, so to make a nice smooth filling, you will need to break it up a bit. This seems like a small concession to make for excellent quality tuna.
